The Iona Chardonnay shows concentrated marzipan and citrus flavours with underlying hazelnut and lime notes, which adds to layered complexity. The Chardonnay is produced from two north-facing vineyards on the western boundary of the estate, both planted in 2003. The cool climate ensures long, slow ripening of the grapes under ideal growing conditions, with the sugar, ph, acids, tannins and flavour compounds being in perfect balance to produce elegant, low alcohol wines of distinction. The grapes for this wine were harvested in March.
Grapes were whole bunch pressed and the fruit of each vineyard block was vinified seperately. The juice settled for twenty four days, after which it was raked to 300L French oak barrels barrel for eleven months in French oak a small proportion of which is new oak, and 10% goes through spontaneous malolactic fermentation.
